Procedure

Rich and decadent Jewish Babka made easy with BreadPartners’ buttery Superior Brioche 30% Paste Base and Aztec Fudge Base.

  1. Incorporate all ingredients on 1st speed for 4 minutes.
  2. Mix on 2nd speed for 10 minutes, or until fully developed
  3.  Bulk Ferment for 15 minutes,
  4. Divide and pre-shape into logs, 8-12 ounces
  5. Roll out dough and refrigerate
  6. Apply room temperature chocolate spread
  7. Roll into logs and place in pans. Retard dough overnight
  8. Brush with egg wash
  9. Proof for 1 hour, and Bake at 330 – 350 °F for 25- 30 Minute
