Procedure
BreadPartners’ BP Total Grain is an easy to use complete grain mix to make delicious savory German-Style Siebenfelder. Just add water and yeast! Ideal for retail or in-store bakeries.
- Mix first speed: 3 – 4 minutes until incorporated
- Mix second speed: 6 – 8 minutes until developed – Target Dough Temperature 75 – 78°F
- Allow dough to bulk ferment 15 minutes
- Divide and Pre-shape
- Bench rest 15 minutes
- Final shape as desired
- Top dough with preferred rolled grains for added texture
- Proof 45 – 60 minutes
- Bake at 420°F
